From Zoe at Wildblend, this Raw, Vegan Chestnut Cream Cake is so incredibly dense, creamy and rich! It almost tastes like an ice-cream cake but BETTER! The perfect dessert for a decadent Christmas feast.

Ingredients:
(Serves 8)

Base

1.5 cups raw almonds (200g)

1 cup Coconut Magic Organic Desiccated Coconut

1.5 cups raw almonds (200g)

1/2 cup dates (soaked & pitted)

2 Tbsp Power Super Foods Raw Organic Cacao Powder

  
Chestnut Cream

 1 cup cashews (soaked)

1,5 cups boiled chestnuts (200g)

1/2 cup full-fat coconut cream

1 Tbsp Coconut Magic Organic Virgin Coconut Oil

2 Tbsp Coconut Magic Organic Coconut Flower Nectar

 



Method

For the base add all ingredients (except frozen raspberries) to a high speed food processor and blend until a sticky cookies dough froms.

Press base into a round approx. 16cm  lined baking tin and set aside.

For the chestnut cream add all ingredients to a high speed blender and blend until creamy and smooth.

Pour chestnut onto base and freeze for 1,5- 2 hours.

Decorate with boiled chestnuts and raw chocolate.

Thaw for about 1/2 hour prior serving.
