Raw Chocolate Mousse Cake
Easter calls for chocolate. Actually any time calls for Chocolate but Easter is as good an excuse as any. This super yummy chocolate Mouse Cake from 'The Healthy Coconut' by Jenni Madison lets you have your cake and eat it, without the guilt.
Ingredients:
Base
1/2 cup raw almonds
1/2 cup raw walnuts
1 cup pitted medjool dates
1/4 cup Coconut Magic Organic Virgin Coconut Oil
1 tsp vanilla essence
Mousse
3 avocados
1/2 cup Coconut Magic Organic Virgin Coconut Oil
1/2 cup Power Super Foods Raw Organic Cacao Powder
1/4 - 1/2 cup Coconut Magic Organic Coconut Flower Nectar, sweeten to taste
1/4 tsp cinnamon powder
Pinch of pink salt
Power Super Foods Raw Organic Cacao Nibs to garnish
Method:
Base
1. Process the nuts in a food processor to a crumbly consistency. Pulse in the coconut oil and vanilla.
2. Add the dates one at a time until well combined and the mixture is sticky.
3. Press into the bottom of a spring-form pan and set aside.
Mousse
1. Blend all of the Mousse ingredients in a high speed blender/food processor until smooth and creamy.
2. Spread over the base, sprinkle with cacao nibs and refrigerate for 2-3 hours before serving.
